Banana Oat Bran Muffins
2 bananas, mashed
1/2 C oat bran
1/2 C whole wheat flour
3/4 C flour
3/4 t baking soda
1/2 t salt
3/4 C sugar
1/2 t cornstarch
2 eggs
1/2 C canola oil

Preheat oven to 400 degrees.

Mix all dry ingredients. Make a well in the center of the bowl and put eggs, oil and bananas into it. Stir until all ingredients are moistened, but don't over stir -- batter should still be lumpy.

Pour batter into greased muffin tins. Bake until golden, about 18 minutes. Remove from pan imediately to cool.

Makes 1 dozen.
