| Warm Spinach Salad | |

1 bunch baby spinach 4 strips bacon, cooked and crumbled (save some fat) 1/4 C minced onions 1/4 C chopped pecans 3T brown sugar |
1/4 C red or yellow bell pepper 1T balsamic vinegar 3T red wine vinegar 1 package bleu cheese (4 oz?), crumbled pinch salt |

In bacon fat, cook onion until soft, then add pecans, sugar, and salt. After sugar cooks in, add vinegars. Toss spinach with warm dressing, then toss with rest of ingredients. Serves 4. |
